The Deliciousness of Cowboy Caviar

It is similar to my black bean salad, but it is made with black-eyed peas and has a vinaigrette-style dressing that gives the caviar a nice spicy taste. Serve with salty tortilla chips and you can not leave the dish. It’s so delicious!

It can be served as an appetizer or side dish with any meal, and sometimes we eat the hearty dip for lunch. It’s really good at any time of the day.

The next time you need to make a dish to share, make cowboy caviar. It is perfect for parties, potlucks, cookouts, game days or even a picnic in the park. Everyone loves this classic dip!

Main component

Black Beans & Black-Eyed Peas – I use canned black beans and black-eyed peas to keep the recipe super simple. Be sure to rinse and drain them. If you prefer dried beans and peas, you can soak and boil them.
Tomatoes – I use Roma tomatoes, but you can use your favorite tomatoes, just remove the seeds.
Peppers – I use red and yellow, but orange and green also work.
Corn – I love to use fresh corn kernels. You can cut them off directly from the cob, you do not need to boil them. If you do not have fresh corn, you can use frozen ones.
Red Onion- I love the taste and pop of the color red onion adds.
Jalapeño pepper- remove the seeds and cut into very small pieces.
Coriander– so fresh!
Avocado – the avocado takes the dip to a new level. So creamy and delicious!
Lime juice – to lighten the dip.

Ingredients for the dressing

The dressing is simple, you can whip it up in less than 5 minutes … and I bet you already have all the ingredients.

  • Olive oil or avocado oil
  • Red plonk vinegar
  • Garlic
  • Honey (can use maple syrup or sugar to make the recipe vegan)
  • Kosher salt and black pepper

How to make cowboy caviar

In a large bowl, combine the beans, black-eyed peas, tomatoes, peppers, corn, onions, jalapeño and coriander. Carefully fold in the avocado and add the fresh lime juice.
Whisk the oil, red plonk vinegar, garlic, honey, salt and pepper in a small bowl.
Pour the dressing over cowboy caviar and stir until everything is well mixed.
Serve immediately or cover and refrigerate for 30 minutes to allow the flavors to marinate.
If you are preparing the caviar in advance, wait with the addition of the avocado to avoid browning. Stir it in just before serving.

Serving suggestions

In my opinion, you NEED to serve cowboy caviar with tortilla chips. It’s such a great bath!
You can also use it as a filling for tacos, burritos or quesadillas.
Use it as a topping for grilled chicken, steak, fish or pork.
Serve it with rice or quinoa.
Spoon it over a green bed and make a salad.

How to save

Storage: Place the caviar in an airtight container and keep it in the refrigerator for up to 4 days. If you have already added the avocado, it is best to do it within 2 days.
Make it ahead: you can make the dressing up to 5 days in advance. Store it in a glass jar or airtight container in the refrigerator. Whisk well before adding to the caviar.
